Sunny Citrus & Spice Salad




Makes 4 Salads


125 mL (1/2 cup) Honey

4 Cinnamon Sticks

2 Bay Leaves

5 mL (1 Tbsp) Black Peppercorns

2 mL (1/2 tsp) Chili Pepper, dried, crushed

2 mL (1/2 tsp) Cloves, ground

2 Oranges, cut into segments

4 Mandarins, divided into segments

1 Lime, cut into segments

1 Pink Grapefruit, cut into segments

1 L (4 cups) Baby Greens

½ Pomegranate, skinned

12 Mint leaves, fresh

60 mL (1/4 cup) Olive Oil

Salt To Taste


  1. In a saucepan, combine honey and spices. Bring to a bowl over low heat. Cool and refrigerate overnight.
  2. Strain honey spice mixture. Set aside.
  3. Segment all citrus fruit.
  4. Toss spiced honey with segmented citrus.
  5. To serve, place greens in a bowl. Arrange citrus on top. Garnish with Pomegranate seeds, mint leaves, salt and drizzle with Olive oil.
