Greek Shrimp Saganaki

INGREDIENTS

Makes 5 portion.

60 mL (1/4 cup) Olive Oil
1 small Red Onion, finely chopped
1 Garlic Clove, minced
30 mL (2 Tbsp) White Wine
1 Finely Chopped Red Bell Pepper
500 g Tomatoes, chopped
5 mL (1 tsp) Cumin, ground
2 mL (1/2 tsp) Paprika
10 mL (2 tsp) Oregano
2 mL (1/2 tsp) Chili Flakes
500 g Shrimp
150 g Feta Cheese, crumbled
¼ bunch Parsley, chopped
¼ bunch Cilantro, chopped
Salt & Black Pepper to taste

PREPARATION

  1. Preheat large rondeau style pot, add olive oil, onion and garlic and sauté. Deglaze with white wine. Add chopped tomato, cumin, paprika, oregano and chili flakes. Cook until tomatoes have broken down into sauce consistency.
  2.  Add shrimp and finely chopped bell pepper.
  3. Mix together and simmer until shrimp is cooked through. Taste and adjust seasonings.
  4. Garnish with feta cheese, chopped parsley and cilantro.
  5. Broil until cheese is heated.
  6. Serve warm with a lightly dressed salad and pita bread.
