Fruit, Seed & Chocolate Granola Bars

2.5 cups – Oat Flakes, Dry
1 cup – Oat Flour
1/2 cup – Ground Flax Seed
1 cup – Sunflower Seeds, Shelled
2 cup – Dried Fruit
(Raisins, Cranberries, Apricots, Chopped Dates or other)
1/2 cup – Chocolate Chips
1 Tbsp – Chia Seeds
1 Tbsp – Psyllium Husks
1/4 cup – Cold Water
1/2 cup – Canola Oil
1/2 cup – Honey
2 tsp – Vanilla Extract


Directions (24 servings)

  1. Preheat oven to 350 F.
  2. In a large bowl, mix oats, flour, ground flax, sunflower seeds, dried fruit, chocolate chips and cinnamon together. Set aside.
  3. In another bowl, mix together chia seeds, psyllium husks, water, oil, honey and vanilla. Let rest for 5 minutes. Add wet mixture into the dry ingredients and mix well.
  4. Spread mixture evenly onto a lined baking sheet. Bake for 20-30 minutes until
    lightly golden.
  5. Cool and cut into bars. Store in an airtight container.
