Heirloom Tomato ” Caesar Mix”

INGREDIENTS

Makes: 4 servings

Ingredients

375 g (3/4 lb)  Kumato Tomatoes

30 mL (2 Tbsp)  Vodka

10 mL (2 Tbsp) Canola oil

To Taste   Salt and Pepper

14 g (1/2 oz) Minors Garlic Concentrate

3 g (0.10 oz) Minors Vegetable Concentrate

14 g (1/2 oz) Minors Clam Base

375 g (3/4 lb) Heirloom Tomatoes

21 g (3/4 oz)   Red Bell Pepper

½ each Cucumber

2 g  Jalapeno Pepper

50 mL (1/4 cup)  Clam Juice

20 mL (1 Tbsp + 1 tsp) Worcestershire Sauce

2 g   Fresh Basil

45 mL (3 Tbsp) Marinara Sauce

90 mL (3 fl oz)  Vodka

114 g (4 oz) Celery

15 mL (1 Tbsp) Lemon Juice

PREPARATION

Vodka Roasted Kumato Tomatoes:

  1. Preheat oven to 400 F.
  2. Slice Kumato tomatoes in half and place in mixing bowl. Drizzle with vodka, oil, salt, and pepper.
  3. Add Minors Garlic concentrate, Clam concentrate and Vegetable Concentrate and toss together.
  4. Place seasoned tomatoes on baking sheet. Bake at 400 F for 10 minutes. Set aside to cool.

Caesar Mix:

    1. Quarter heirloom tomatoes.
    2. Peel and chop cucumber.
    3. Chop celery.
    4. Seed and chop peppers.
    5. Place all vegetables in a blender.
    6. Add Vodka Roasted Kumato Tomatoes, marinara sauce, basil, lemon juice, clam juice and Worcestershire sauce and blend until smooth.
    7. Strain using a fine sieve.
    8. Add water to your desired consistency.
    9. Add vodka and refrigerate until ready to use.
