INGREDIENTS

250 ml – Flour All Purpose
250 ml – Oat Bran
10 ml – Baking Soda
5 ml – Baking Powder
3 ml – Salt
10 ml – Cinnamon Ground
125 ml – Sugar,Brown,Packed
250 ml – Carrots Peeled Grated
2 each – Apples Peeled Grated
125 ml – Raisins Sultana Seedless
250 ml – Pecan Pieces
60 ml – Oil Vegetable
125 ml – Milk 2%
2 each – Eggs Large,Omega 3
5 ml – Vanilla Extract

METHOD

  1. Combine dry ingredients
  2. Whisk oil, milk, eggs and vanilla.
  3. Combine wet and dry ingredients.
  4. Spray muffin tins. Line with paper cups (optional)
  5. Using a #12 scoop, portion batter into muffin cups.
  6. Bake at 300 F for 25 to 30 minutes or until baked.
  7. Variations: Walnuts may be substituted for pecans.
